They pick grapes at full maturity, after having carefully monitored the acidity, pH and sugar on each of their 38 plots. Human intervention is very limited and oak-aging has been banned since 2002, replaced entirely with vats. Grapes and stalks are separated to express the freshness and elegance of the fruit while the wine remains rich and structured.<\/p>\n\n<\/div>\n\n\n\n
