New Year's Eve with Emmanuel

Originally from Burgundy, Emmanuel Sala started his lifelong love affair with biodynamic winemaking 30 years ago. As the master artisan in the biodynamic journey of our vineyard Clos Marey-Monge, he never stops seeking the purest expression of Pinot Noir and Chardonnay. The New Year’s menu at the Sala’s is chosen specifically to match the extraordinary nectars that will be in the glasses. 

What does New Year's mean to you and how do you celebrate?

“For me, Christmas is a moment together with family when we all gather around a beautifully set table of delicious dishes; while New Year’s eve is more a festive celebration. I believe that the atmosphere is more important than the food for New Year’s Eve. It’s the perfect time to surprise my guests with extraordinary wines. It is a good excuse to close the year on a high note and pair the wines with a classic menu.

I really enjoy white wine to start the evening. This year, I would like to open the dinner with a tasting of Ladoix Premier Cru “Les Gréchons” 2016, from the Famille Carabello-Baum. It is one of the highest plots on the steep sides of the Corton Hill, where you once could find ancient quarries. The intense and mineral Chardonnay produced from this climat pairs perfectly with Burgundy snails.”

How do you pair your main course?

“This is when you should pour the best wine and pair it with a piece of meat. In my case, it will be nothing less than a Clos Marey-Monge Monopole 2016. In Burgundy, the year 2016 is well-known for its low yields, which explains why the vintage is so special. Behind its ruby color with deep purple tints, Clos Marey-Monge Monopole 2016 is a dense, concentrated and very well-balanced wine. When it comes to the pairing of this extraordinary wine, we will have a free-range capon, that I’ll pick from my local butcher. I am picky about the quality of the ingredients that I use, preferring local and sustainably raised meats. One thing I love about poultry is that it pairs perfectly with Clos Marey-Monge Monopole.

As for the final touch, I always pick up a young, lighter wine to come after the main course. A bottle of 2015 Nuits-Saint-Georges will be the perfect fit, paired with a red fruit salad.”
