“I plan on cooking a traditional French meal for Christmas day. The holidays are a big deal to me, as it is the only time of the year that I get to reunite with my cousins, aunts, and uncles. We try to make the most of the occasion. This year, I will be serving a prime rib of beef that we will cook in our fireplace – it smells as good as it tastes! I will add a morel sauce to make it feel even more festive, not to mention that the recipe will pair perfectly with a Maranges Premier Cru “Le Clos des Loyères” 2015, a favorite of mine. Maranges is a lesser-known appellation harboring a few Premiers Crus and offering an excellent value for money. Our 2015 vintage already started to evolve and develop aromas and flavors of mushroom and forest floor that I love. It is outstanding with a piece of red meat!”
“I will prepare a mixed cheese board. To suit the preferences of all of my guests, I’ve decided to share a wide range of cheeses to suit all tastes. My own favorite is a fruity summer Comté which I pair with our Corton-Charlemagne Grand Cru 2015. The rich and aromatic palate of the Corton-Charlemagne balances very well with the flavors of this cheese: floral, fruity and slightly nutty. It’s one of my all-time favorite pairings.
After cheese, there is often not much room for dessert, but I like to offer a selection of chocolate pralines. In our village of Pommard, we are fortunate to have the excellent shop “Appellation Chocolat” producing chocolate and ganaches. They offer traditional chocolate pralines, but also raspberry, blackcurrant, pepper and sesame flavoured varieties. These are perfect accompaniments to our wines and I recommend the fruit-flavored chocolates particularly with our Volnay Premier Cru 2014. The acidity of the fruit and the bitterness of cacao truly reveal the fruity aromas of pinot noir and really soften the tannins of the wine. Some combinations are surprising and daring.
