An Insider’s Guide to the Holiday Season with Robin

An Insider’s Guide to the Holiday Season with Robin Dominique: Wine Pairings, Family Traditions, and Insights on Burgundy

As the holiday season approaches, it’s a wonderful opportunity to celebrate cherished traditions, explore delightful wines, and master the art of pairing them. We had the pleasure of chatting with Robin, a passionate wine enthusiast and Wine Advisor at Château de Pommard. He generously shared his personal journey into the world of wine, his heartfelt family traditions, and exciting insights about Burgundy that every wine lover will appreciate.

How Did You Discover the World of Wine?

For Robin, diving into the world of wine was a delightful surprise. “Back in my second year of business school, I got to choose a specialty. Out of curiosity, I picked the wine business option, and it felt like uncovering a whole new universe,” he shares with enthusiasm. Understanding the basics of the wine industry sparked a lifelong passion for not just the wines themselves, but the fascinating culture that surrounds them. This rewarding journey ultimately brought him to Château de Pommard, where he now shares his enthusiasm for Burgundy wines with others.

Holiday Season Plans: Family, Festivities, and Fine Wines

As the year comes to a close, Robin cherishes the time spent with family. “The holiday season is all about coming together,” he expresses warmly, highlighting that it’s the perfect opportunity to savor some remarkable wines. This year, he’s chosen two standout bottles from Château de Pommard’s exquisite collection to share during family gatherings. His top pick is our cuvée 75 Rangs, a wine he adores for its delicious minerality and unique saltiness—truly emblematic of Burgundy’s character. He also recommends our flagship blend, the Clos Marey-Monge Monopole 2019, which he describes as simply “outstanding” and beautifully versatile for both immediate enjoyment and aging.

Festive Pairings: What’s on the Menu?

Having grown up in the picturesque Alps, Robin has a special fondness for the region’s famous cheese dishes. This holiday season, he’s excited to prepare Mont d’Or, baked until it’s gloriously creamy and served with homemade bread. “While we wait for the Mont d’Or to melt, let’s pop open a bottle of Clos Marey-Monge!” he suggests, inviting everyone into the cozy joy of a festive meal perfectly complemented by the richness of Burgundy wine.

Wine Pairing Tips for Beginners: Rules to Follow and When to Bend Them

For those just venturing into the world of wine pairing, Robin shares some friendly guidelines:

1. Match flavor intensity: A bold wine pairs well with a hearty dish, while a delicate wine pairs beautifully with lighter fare.

2. Sweetness loves sweetness: Dessert wines are fantastic with desserts or dishes that have sweet notes.

3. Acidity with acidity: Dishes with acidity crave acidic wines; think fresh, crisp whites with oysters!

4. Body for body: A rich sauce requires a wine with the same richness, whether it’s red or white, to achieve harmony.

“Great wine deserves great food,” Robin encourages. He also notes that while these rules are helpful, they can be flexible as long as they enhance the overall experience.

A New Perspective on Wine

“I’ll admit, I didn’t have a liking for wine at first,” Robin admits with a smile. However, as he delved into the art of winemaking, the terroir, and the nuances of tasting, his perspective shifted dramatically. Today, each tasting is a unique opportunity to truly understand and appreciate the wine, transforming his wine journey into an exciting adventure.

Why Burgundy Stands Out in the Wine World

Burgundy holds a special place in Robin’s heart. Known around the globe for its exceptional terroirs, he continues to be captivated by its charm. “Every small vineyard produces something truly one-of-a-kind,” he reflects, marveling at the rich history and natural beauty embodied in Burgundy wines. Whether you’re an experienced collector or just starting out, Burgundy offers boundless opportunities for exploration and tasting pleasure.

Observing Wine Trends: Organic and Biodynamic Wines

The wine industry is entering an exciting phase with growing attention to organic and biodynamic practices. “People are increasingly interested in enjoying better quality wine, even if it comes with a higher price tag,” Robin shares. This shift not only supports the production of exceptional wines but also promotes health and sustainability—something he hopes will keep gaining momentum in the industry.

Advice for Beginners: Starting Your Burgundy Journey

For those eager to embark on their Burgundy journey, Robin gives some wonderful advice: “Be curious!” He encourages exploring lesser-known appellations from Mâcon to Chablis, where incredible wines await discovery. Understanding Burgundy’s rich history and geology can deepen your appreciation for what makes these wines so special. For those wanting to dive even deeper, programs like the Wine and Spirit Education Trust that we offer at our École V or the French Wine Scholar can be fantastic resources for enriching your wine knowledge.

Here’s to a holiday season filled with joyful gatherings, outstanding wines, and the spirit of exploration in every glass! Cheers!
