Bourgogne Rosé 2023 and Thai-inspired tuna tataki

Ingredients (2 servings)
2 tuna steaks
10 tablespoons sesame oil
5 tablespoons olive oil
5 tablespoons salted soy sauce
2 garlic cloves
A handful of pink peppercorns
Half a green chili
Juice of one lime
5 cm grated ginger
2 lemongrass stalks
100gr of sesame seeds
Instructions
- In a bowl, mix the sesame oil, olive oil, soy sauce, lime juice, and grated ginger. Cut the lemongrass stalks into small pieces and add them to the mixture.
- Cut the half chili into three pieces. In a mortar, add the pink peppercorns, chili, and garlic, then crush everything until the peppercorns are well crushed. Add this mixture to the bowl and mix well. Adjust the amount of lime juice, soy sauce, and sesame oil to your taste.
- Once the marinade is to your liking, add the tuna steaks. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least two hours.
- Once the tuna has marinated, roll it in sesame seeds to coat all four sides. Heat a pan with a bit of olive oil. When the oil is hot, cook the tuna steaks for 30 seconds on each side, ensuring they are seared on the outside while remaining raw on the inside..
Serve each steak on a bed of salad, ideally a mix of lamb’s lettuce and arugula, then drizzle with a tablespoon of the marinade. Enjoy and savor this delicious dish with a glass of our Burgundy Rosé 2023.
