Instructions
For the roast chicken:
-
Preheat the oven to 200 degrees Celsius on grill mode.
-
Start by halving 6 garlic cloves and gently rubbing them over the chicken.
-
In a small bowl, combine the salt, pepper, and garlic cloves. Place the seasoned garlic cloves inside the chicken along with the thyme and rosemary.
-
Transfer the chicken to an ovenproof dish. Drizzle the sunflower oil over the chicken, then sprinkle the salt, pepper, thyme, and rosemary mixture evenly over the surface.
-
Roast the chicken in the oven for about 1 hour. Halfway through cooking, turn the chicken over to ensure both sides are golden brown and crispy. Remember to baste the chicken with its juices from time to time for extra moistness during cooking.
-
Put the chicken on a plate and slice, ready to serve!
For the potatoes:
-
Cut the potatoes in half without separating them.
-
Wrap each potato individually in aluminum foil.
-
Inside each potato, season with salt, pepper, half a garlic clove, a knob of salted butter, and a sprig of thyme and rosemary.
-
Seal the foil tightly around each potato, doubling it if necessary to prevent any juices from escaping during cooking.
-
Arrange the prepared potatoes on an ovenproof dish and bake at 200 degrees Celsius for 45 minutes.
-
Remove the potatoes from the foil and transfer them to a serving plate alongside the chicken. Drizzle them with some of the delicious chicken juices to enhance their flavor.
